Can you use GPS to prove where you’ve been?

Im planning to undertake a long sponsered cycle and I intend to buy a GPS system to aid navigation.
My question is

Can my entire journey be stored on a GPS?. Basically i want to have some aditional means of verifying my journey. ie Someone could look at my GPS when i’ve finished and see that i have completed the entire route.

is this a common feature on all GPS’s and do they all store journeys of over 800 miles.
